Elderberry syrup

Elderberry is much touted in traditional medicine as an effective cold remedy.

Ingredients :

  • 1 1/2 cups dried elderberries (or 3 cups fresh elderberries)
  • 1/2 cup dried elderflowers (or 1 cup fresh elderflowers)
  • 2/3 cup of honey 3acres
  • About 2 cups of brandy or other 40% alcohol

Take 15 ml 3 to times a day at the start of a cold or flu and continue and continuntil you feel better.

Instructions :

  1. Place the elderberries, elderflowers, and honey in a 1 liter jar.
  2. Pour the brandy into the jar, leaving an inch of space at the top. Use a knife to mix everything together and make sure all air bubbles are removed.
  3. Store the jar in a cool, dark place for 6 weeks or longer. Shake the jar regularly and if using fresh herbs, make sure they remain submerged in the alcohol for the duration of the infusion.
  4. When ready, strain through a fine sieve and throw the solids into the compost.
  5. Transfer your delicious elixir to a clean bottle, labeled with the date. Store in a cool, dark place for up to a year.
